It probably turns on when the coolant temp. reaches a certain number. It's possible to make a switch for manual control.

try to look towards the bottom of your radiator.. there should be a sensor and some wires running off it..

Actually most vehicles use a "Fan relay switch" to turn the fans on or off. These are not controlled by any one sensor per say, but the PCM does interpret certain signals like temp and A?C on or off to determine if the fans need to be on. Routing your own line is easy.. 30-40A circuit, so use a good switch at that meets or exceeds the amperage of the fan relay, as well as putting your own fuse inline just after the battery. Good 14ga wire should be used.
