i got a great phone call yesterday. i found out that i'm a finalist in a BBQ recipe contest. i get to cook it infront of a crowd at a home and garden show this weekend.
the grand prize is a $1300 BBQ.
one of the judges is a guy from the food network.

you all can have the recipe, enjoy!
CILANTRO LIME CHICKEN (serves 8)
Ingredients
The juice of 3 and a half Limes
One bunch fresh Cilantro
¾ of a bunch on Green Onions
5 cloves fresh Garlic
2 tsp Chili powder
2 tsp ground Cumin
1 Tbsp Soy sauce
3 Tbsp vegetable oil
2 tsp M+M Steak Spice or 1 1/2 tsp coarse Salt
Method
Add all the ingredients to the blender and chop until the garlic is about 1/16” in size. Marinate 16 boneless/skinless chicken thighs (remove any excess fat) for one to two hours, or if in a jam, 15 minutes will do just fine. Cook over a high flame on the Bar-B-Que for about 2 minutes a side.
Serve with rice, pita bread and sour cream or yoghurt with chopped red onions and fresh parsley.
p.s. this one will impress the girls, so make your g/f dinner tomorrow.

well i did not win the BBQ. some girl thats pregnant cooked some cajun chicken burger, that was more southwestern than cajun won. i know mine is good, i really don't care what other people think.
i look at it this way, i was one of three chicken recipes out of nine finalists picked out of 500+ entries. that to me says enough.
the chef from the food network did not show up, he is now dead to me.
Marinating right now. My whole apartment smells like cilantro and cumin. :p

It's pretty good. The lime gives it sort of a zesty flavor. I'll definitely make it again.

i would say that its about 4-6 tablespoons(2-3FLoz, 1/4-1/3 of a cup) for each lime, but that too is just a guess.
